- 1 pound carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, toss the carrots with olive oil, maple syrup, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 25 to 30 minutes, stirring halfway through, until the carrots are tender and lightly caramelized.
- Serve immediately.
Notes
- For extra flavor, add a pinch of cinnamon before roasting.
- If your carrots are very thick, cut them smaller so they cook evenly.
