Simple recipe for crispy, baked macaroni and cheese bites.

- 1 cup cooked elbow macaroni
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup milk
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup panko breadcrumbs
Instructions
- Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a mini muffin tin.
- Melt the butter in a small saucepan over medium heat.
- Whisk in the flour and cook for one minute, stirring constantly.
- Gradually whisk in the milk until the mixture thickens slightly.
- Remove the saucepan from the heat. Stir in the cheddar cheese, salt, and pepper until the cheese melts.
- Fold in the cooked macaroni until it is fully coated with the cheese sauce.
- Spoon the mixture evenly into the prepared mini muffin cups, pressing down lightly.
- Sprinkle the panko breadcrumbs over the top of each bite.
- Bake for 12 to 15 minutes, or until the tops are golden brown and the bites are heated through.
- Let the bites cool in the tin for 5 minutes before removing them.
Notes
- You can use any type of small pasta shape if elbow macaroni is unavailable.
- For extra flavor, add a pinch of nutmeg to the cheese sauce.
