These loaded steak potatoes are a hearty and satisfying meal. They combine tender steak with creamy potatoes, cheese, and your favorite toppings.


Ingredients

  • 1 lb steak (e.g., sirloin, ribeye)
  • 2 large baking potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons chopped chives
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rub potatoes with olive oil, salt, and pepper. Pierce with a fork.
  3. Bake potatoes for 50-60 minutes, or until tender.
  4. While potatoes bake, season steak with salt and pepper.
  5. Cook steak in a hot skillet to your desired doneness. Let rest, then slice.
  6. Cut baked potatoes in half lengthwise. Scoop out most of the flesh, leaving a shell.
  7. Mash the scooped potato flesh with sour cream and half the cheese. Season with salt and pepper.
  8. Spoon the mashed potato mixture back into the potato shells.
  9. Top with sliced steak, remaining cheese, and chives.
  10. Return to oven for 5-10 minutes, or until cheese is melted.
