Ingredients

  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 red chili pepper, deseeded and finely chopped (optional)
  • 1 liter vegetable broth
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup chopped broccoli florets
  • 1 cup chopped cauliflower florets
  • 1/2 tsp turmeric
  • 1/4 tsp cumin
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, ginger, and chili pepper (if using) and cook for 1 minute more until fragrant.
  4. Pour in the vegetable broth.
  5. Add carrots, celery, broccoli, and cauliflower.
  6. Stir in turmeric and cumin.
  7. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh cilantro or parsley.

Notes

  • For a spicier soup, leave some seeds in the chili pepper.
