Ingredients

- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 red chili pepper, deseeded and finely chopped (optional)
- 1 liter vegetable broth
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 cup chopped broccoli florets
- 1 cup chopped cauliflower florets
- 1/2 tsp turmeric
- 1/4 tsp cumin
- Salt and black pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, ginger, and chili pepper (if using) and cook for 1 minute more until fragrant.
- Pour in the vegetable broth.
- Add carrots, celery, broccoli, and cauliflower.
- Stir in turmeric and cumin.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro or parsley.
Notes
- For a spicier soup, leave some seeds in the chili pepper.
- You can add other low-calorie vegetables like zucchini or spinach.
- This soup can be made ahead and reheated.
