Ingredients

- 1 can condensed milk
- 1 can evaporated milk
- 1 cup lemon juice
- 4 egg whites
- 1 cup granulated sugar
- 1/4 cup water
Instructions
- In a blender, combine condensed milk, evaporated milk, and lemon juice. Blend until smooth. Pour into a serving dish.
- In a saucepan, combine sugar and water. Cook over medium heat, stirring until sugar dissolves.
- Bring to a boil and cook until syrup reaches 118°C (245°F) or forms a soft ball.
- In a separate bowl, beat egg whites until stiff peaks form.
- Slowly pour the hot sugar syrup into the beaten egg whites while continuing to beat. Beat until the meringue is stiff and glossy.
- Spoon or pipe the meringue over the lemon mixture.
- Chill for at least 2 hours before serving.
Notes
- For a smoother texture, you can strain the lemon mixture before pouring it into the serving dish.
- Ensure your bowl and whisk for the egg whites are clean and dry.
- Be careful when handling hot sugar syrup.
