- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into pieces
- 1/2 cup milk
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup boiling water
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk, lemon juice, and lemon zest until just combined. Do not overmix.
- Pour the batter evenly into the prepared baking dish.
- Carefully pour the 1/2 cup of boiling water over the top of the batter. Do not stir.
- Bake for 30 to 35 minutes, or until the top is golden brown and the liquid has thickened.
- Let the cobbler cool slightly before serving.
Notes
- Serve warm with a dusting of powdered sugar or a scoop of vanilla ice cream.
- For a stronger lemon flavor, increase the zest to 1 1/2 tablespoons.
