- 1 (9 inch) unbaked pie crust
- 1 1/2 cups granulated sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs, lightly beaten
- 1/2 cup unsalted butter, melted
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup milk
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- In a medium bowl, whisk together the sugar, flour, and salt.
- Add the eggs, melted butter, lemon juice, lemon zest, and milk to the sugar mixture. Mix until just combined.
- Pour the filling into the unbaked pie crust.
- Bake for 40 to 45 minutes, or until the center is mostly set but still slightly jiggly.
- Cool the pie completely on a wire rack before slicing.
Notes
- You can dust the cooled pie with powdered sugar before serving.
- For a richer flavor, use fresh lemon juice only.
