Description

A simple recipe for a rich, tart lemon custard pie with a flaky crust.


Ingredients

  • 1 (9 inch) unbaked pie crust
  • 1 1/2 cups granulated sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs, lightly beaten
  • 1/2 cup unsalted butter, melted
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, whisk together the sugar, flour, and salt.
  3. Add the eggs, melted butter, lemon juice, lemon zest, and milk to the sugar mixture. Mix until just combined.
  4. Pour the filling into the unbaked pie crust.
  5. Bake for 40 to 45 minutes, or until the center is mostly set but still slightly jiggly.
  6. Cool the pie completely on a wire rack before slicing.

Notes

  • You can dust the cooled pie with powdered sugar before serving.
  • For a richer flavor, use fresh lemon juice only.
