Description

Simple bars with a graham cracker crust and a tart key lime filling.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup granulated sugar plus 1/2 cup for filling
  • 6 tablespoons unsalted butter, melted
  • 1 (14 ounce) can sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup fresh key lime juice
  • 1 teaspoon lime zest

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  2. Combine graham cracker crumbs, 1/2 cup sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
  4. In a separate bowl, whisk together the sweetened condensed milk, 1/2 cup sugar, egg yolks, key lime juice, and lime zest until smooth.
  5. Pour the filling over the cooled crust.
  6. Bake for 15 to 20 minutes, or until the edges are set but the center still has a slight jiggle.
  7. Cool the bars completely on a wire rack.
  8. Chill in the refrigerator for at least 2 hours before cutting into squares.

Notes

  • Use fresh key lime juice for the best flavor. Bottled juice changes the taste.
  • If you cannot find key limes, use regular limes, but reduce the amount slightly.
  • Dust with powdered sugar before serving, if desired.
