Description

A low-carb take on cheeseburger flavors in a convenient quesadilla format.


Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1/4 cup chopped dill pickles
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large low-carb tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup butter, melted

Instructions

  1. Cook ground beef and onion in a skillet over medium heat until beef is browned and onion is tender. Drain excess fat.
  2. Stir in pickles, ketchup, mustard, Worcestershire sauce, salt, and pepper. Cook for 2 minutes, stirring to combine.
  3. Spread half of the beef mixture evenly over two tortillas.
  4. Sprinkle 1/2 cup cheddar cheese over the beef mixture on each of those two tortillas.
  5. Top with the remaining two tortillas.
  6. Brush the outsides of the quesadillas with melted butter.
  7. Cook quesadillas in a skillet over medium heat for 3-4 minutes per side, or until golden brown and cheese is melted.
  8. Cut into wedges and serve immediately.
