A straightforward recipe for a classic Italian pasta salad with vegetables and vinaigrette.

- 1 pound rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup mozzarella balls (small)
- 1/4 cup fresh parsley, chopped
- 1/2 cup Italian vinaigrette dressing
Instructions
- Cook the rotini pasta according to package directions until al dente.
- Drain the pasta and rinse it under cold water to stop the cooking process. Drain well.
- In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, black olives, red onion, mozzarella balls, and parsley.
- Pour the Italian vinaigrette dressing over the pasta and vegetable mixture.
- Toss gently until all ingredients are evenly coated with the dressing.
- Cover the bowl and chill in the refrigerator for at least 30 minutes before serving.
Notes
- You can add cubed salami or pepperoni for a meat addition.
- Adjust the amount of dressing based on your preference for moistness.
