Description
A quick and flavorful pasta dish with shrimp, tomatoes, and spinach.
Ingredients

- 12 oz pasta
- 1 tbsp olive oil
- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 5 oz fresh spinach
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from skillet.
- Add garlic to the skillet and cook until fragrant, about 30 seconds.
- Stir in diced tomatoes and bring to a simmer. Cook for 5 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Return shrimp to the skillet. Add cooked pasta and reserved pasta water. Toss to combine.
- Stir in Parmesan cheese. Season with salt and pepper to taste.
Notes
- For extra flavor, add a pinch of red pepper flakes with the garlic.
- You can substitute chicken or other seafood for the shrimp.
