Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, dried basil, and dried oregano. Bring to a simmer.
  4. Reduce heat and let simmer for at least 15 minutes to allow flavors to meld.
  5. Season with salt and pepper to taste.
  6. Stir in fresh basil and heavy cream (if using) just before serving.

Notes

  • For a smoother soup, you can blend it with an immersion blender or in a regular blender before adding the fresh basil and cream.
