Irresistible Sweet Chili Chicken Stir Fry

Description

A quick and flavorful chicken stir fry with a sweet and spicy chili sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss chicken with soy sauce and cornstarch.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and stir-fry until browned and cooked through. Remove chicken from skillet.
  4. Add bell peppers and onion to the skillet and stir-fry until tender-crisp.
  5. Add garlic and ginger and cook for 1 minute until fragrant.
  6. In a small bowl, whisk together sweet chili sauce and rice vinegar.
  7. Return chicken to the skillet. Pour sauce over chicken and vegetables.
  8. Stir to coat and cook for 2-3 minutes until sauce thickens.
  9. Serve immediately over cooked rice.

Notes

  • For extra heat, add a pinch of red pepper flakes.
  • You can add other vegetables like broccoli or snap peas.
