Description
A quick and flavorful chicken stir fry with a sweet and spicy chili sauce.
Ingredients

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/2 cup sweet chili sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- Cooked rice, for serving
Instructions
- In a bowl, toss chicken with soy sauce and cornstarch.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and stir-fry until browned and cooked through. Remove chicken from skillet.
- Add bell peppers and onion to the skillet and stir-fry until tender-crisp.
- Add garlic and ginger and cook for 1 minute until fragrant.
- In a small bowl, whisk together sweet chili sauce and rice vinegar.
- Return chicken to the skillet. Pour sauce over chicken and vegetables.
- Stir to coat and cook for 2-3 minutes until sauce thickens.
- Serve immediately over cooked rice.
Notes
- For extra heat, add a pinch of red pepper flakes.
- You can add other vegetables like broccoli or snap peas.
