A simple and flavorful chicken and bell pepper bake perfect for summer meals.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 bell peppers (any color), seeded and chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chicken pieces, chopped bell peppers, and chopped onion.
- Add the minced garlic, olive oil, oregano, basil, salt, and pepper to the bowl. Toss everything together until the chicken and vegetables are evenly coated.
- Spread the mixture in a single layer in a 9×13 inch baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- If desired, sprinkle Parmesan cheese over the top during the last 5 minutes of baking.
- Serve hot.
Notes
- You can add other vegetables like zucchini or cherry tomatoes.
- Serve with rice, quinoa, or a side salad.
