Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 bell peppers (any color), seeded and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken pieces, chopped bell peppers, and chopped onion.
  3. Add the minced garlic, olive oil, oregano, basil, salt, and pepper to the bowl. Toss everything together until the chicken and vegetables are evenly coated.
  4. Spread the mixture in a single layer in a 9×13 inch baking dish.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. If desired, sprinkle Parmesan cheese over the top during the last 5 minutes of baking.
  7. Serve hot.
