Ingredients

  • 1 large cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon chili garlic sauce (or to taste)
  • 1/2 teaspoon sugar
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. Combine cucumber and red onion in a medium bowl.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, chili garlic sauce, sugar, and red pepper flakes (if using).
  3. Pour the dressing over the cucumber and onion mixture.
  4. Toss to coat evenly.
  5. Let sit for at least 15 minutes to allow flavors to meld.
  6. Stir in fresh cilantro before serving.

Notes

  • For a milder spice, reduce or omit the chili garlic sauce and red pepper flakes.
  • You can add other vegetables like bell peppers or jalapeños.
