Ingredients

- 1 large cucumber, thinly sliced
- 1/4 cup red onion, thinly sliced
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon chili garlic sauce (or to taste)
- 1/2 teaspoon sugar
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon chopped fresh cilantro
Instructions
- Combine cucumber and red onion in a medium bowl.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, chili garlic sauce, sugar, and red pepper flakes (if using).
- Pour the dressing over the cucumber and onion mixture.
- Toss to coat evenly.
- Let sit for at least 15 minutes to allow flavors to meld.
- Stir in fresh cilantro before serving.
Notes
- For a milder spice, reduce or omit the chili garlic sauce and red pepper flakes.
- You can add other vegetables like bell peppers or jalapeños.
- This salad is best served chilled.
