Irresistible Nectarine Hand Pies

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter, cut into cubes
  • 1/4 to 1/2 cup ice water
  • 4 cups sliced nectarines (about 45 medium)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons granulated sugar (for sprinkling)

Instructions

  1. In a large bowl, whisk together flour and salt. Cut in cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. In a separate bowl, combine sliced nectarines, 1/2 cup sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Toss gently to coat.
  3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. On a lightly floured surface, roll out one disk of dough into a 12-inch circle. Cut out 6 (4-inch) circles. Repeat with the second disk of dough.
  5. Place about 2 tablespoons of the nectarine mixture onto one half of each dough circle, leaving a 1/2-inch border.
  6. Moisten the edges of the dough with water. Fold the other half of the dough over the filling to create a half-moon shape. Crimp the edges with a fork to seal.
  7. Cut a few small slits in the top of each hand pie to allow steam to escape.
  8. Place the hand pies on the prepared baking sheet. Brush the tops with the beaten egg wash and sprinkle with the remaining 2 tablespoons of sugar.
  9. Bake for 20-25 minutes, or until golden brown and the filling is bubbly.
  10. Let cool on a wire rack before serving.

Notes

  • For a crispier crust, you can chill the assembled hand pies for another 15 minutes before baking.
  • Serve warm with a scoop of vanilla ice cream for an extra treat.
