- 2 large eggs

- 1/4 cup fresh lemon juice
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine 1 cup flour, softened butter, 1/4 cup sugar, and salt. Mix until crumbly.
- Press the crumb mixture evenly into the bottom of the prepared pan to form the crust.
- Bake the crust for 15-20 minutes, or until lightly golden.
- While the crust bakes, prepare the filling. In a separate bowl, whisk together eggs, 1 cup sugar, 1/4 cup flour, lemon zest, and lemon juice until well combined.
- Pour the lemon filling over the warm crust.
- Bake for another 20-25 minutes, or until the filling is set and the edges are lightly golden.
- Let the bars cool completely in the pan on a wire rack.
- Once cooled, dust generously with powdered sugar before cutting into squares.
Notes
- For a tangier bar, increase the lemon juice slightly.
- Ensure the bars are completely cool before dusting with powdered sugar for a clean finish.
