High Protein Strawberry Cheesecake Bites

Description

Healthy and delicious no-bake cheesecake bites packed with protein and fresh strawberries.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1/4 cup water
  • 1 cup Greek yogurt
  • 1/4 cup pureed strawberries
  • 1 teaspoon vanilla extract
  • Fresh strawberries for topping

Instructions

  1. Combine oats, protein powder, almond butter, maple syrup, and water in a food processor. Process until a dough forms.
  2. Press the dough into the bottom of an 8×8 inch baking dish lined with parchment paper.
  3. In a separate bowl, mix Greek yogurt, pureed strawberries, and vanilla extract until smooth.
  4. Pour the yogurt mixture over the oat base and spread evenly.
  5. Top with fresh strawberries.
  6. Freeze for at least 2 hours, or until firm.
  7. Cut into bite-sized pieces and serve.
