Description

Ingredients

  • 1/4 cup maple syrup

  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini, rolled oats, whole wheat flour, applesauce, maple syrup, chopped nuts (if using), cinnamon, baking soda, salt, and egg.
  3. Mix until all ingredients are well combined.
  4. Drop rounded tablespoons of dough onto the prepared baking sheet.
  5. Bake for 12-15 minutes, or until golden brown around the edges.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
