A healthy and delicious Tuscan chicken pasta recipe.
Ingredients

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces whole wheat pasta, cooked according to package directions
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, chicken broth, heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Bring to a simmer.
- Return chicken to the skillet. Reduce heat to low, cover, and simmer for 10 minutes, or until chicken is cooked through.
- Stir in spinach and cook until wilted, about 2 minutes.
- Serve over cooked whole wheat pasta.
Notes
- For a spicier dish, add a pinch of red pepper flakes.
- You can substitute shrimp or sausage for chicken.
- Add other vegetables like mushrooms or bell peppers.
