Description

A healthy and delicious Tuscan chicken pasta recipe.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces whole wheat pasta, cooked according to package directions
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in diced tomatoes, chicken broth, heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Bring to a simmer.
  4. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 10 minutes, or until chicken is cooked through.
  5. Stir in spinach and cook until wilted, about 2 minutes.
  6. Serve over cooked whole wheat pasta.

Notes

  • For a spicier dish, add a pinch of red pepper flakes.
  • You can substitute shrimp or sausage for chicken.
  • Add other vegetables like mushrooms or bell peppers.
