- 1/2 cup peanut butter
- 1/3 cup honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
Instructions
- Line a mini muffin tin with paper liners.
- In a medium bowl, combine rolled oats, peanut butter, honey, melted coconut oil, and vanilla extract.
- Stir until well combined.
- Spoon the mixture into the prepared mini muffin cups, pressing down gently.
- Place the tin in the freezer for at least 15-20 minutes, or until firm.
- Store the cups in an airtight container in the refrigerator or freezer.
Notes
- For a firmer texture, add more coconut oil.
- You can substitute almond butter or sunflower seed butter for peanut butter.
- Add chocolate chips for extra flavor.
