Description
A quick and flavorful lemon chicken pasta dish perfect for a weeknight meal.
Ingredients

- 12 oz pasta
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook until fragrant, about 1 minute.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in heavy cream and Parmesan cheese. Cook until sauce thickens slightly, about 2-3 minutes.
- Return chicken to the skillet. Add cooked pasta and toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Stir in fresh parsley. Season with salt and pepper to taste.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- Garnish with additional Parmesan cheese and lemon zest if desired.
