Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 cup full-fat coconut milk
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Pat the shrimp dry with paper towels. Season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through.
  4. Pour in the coconut milk and bring to a simmer.
  5. Stir in the minced garlic and lime juice. Cook for 1 minute more, until the sauce has slightly thickened.
  6. Stir in the chopped cilantro.
  7. Serve immediately.
