- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 cup full-fat coconut milk
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Pat the shrimp dry with paper towels. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through.
- Pour in the coconut milk and bring to a simmer.
- Stir in the minced garlic and lime juice. Cook for 1 minute more, until the sauce has slightly thickened.
- Stir in the chopped cilantro.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
