- 1 pound pasta
- 8 ounces bacon, chopped
- 1 pound mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, cook bacon until crisp. Remove bacon and set aside, leaving drippings in the skillet.
- Add mushrooms and onion to the skillet and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in heavy cream and bring to a simmer. Cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked pasta and bacon to the skillet. Toss to coat evenly with the sauce.
- Season with salt and pepper to taste.
- Serve immediately, garnished with fresh parsley.
Notes
- For a richer flavor, use a mix of mushroom varieties.
- You can add a splash of white wine to deglaze the pan after cooking the mushrooms and onions.
- Adjust the amount of Parmesan cheese to your preference.
