- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 large eggs, separated
- 1/4 cup granulated sugar
Instructions
- Whip the heavy cream in a large bowl until stiff peaks form.
- In a separate bowl, whisk together the powdered sugar, cocoa powder, vanilla extract, and salt.
- Add the egg yolks to the cocoa mixture and whisk until smooth.
- In another clean bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue beating until stiff, glossy peaks form.
- Gently fold the whipped cream into the cocoa mixture.
- Carefully fold the beaten egg whites into the chocolate mixture until just combined. Do not overmix.
- Spoon the mousse into individual serving dishes.
- Chill for at least 2 hours before serving.
Notes
- For a richer flavor, use dark chocolate instead of cocoa powder. Melt 4 ounces of bittersweet chocolate and fold it into the yolk mixture.
- Ensure your eggs are fresh for the best results.
