A healthy and tasty recipe for chicken stuffed bell peppers.
Ingredients

- 4 large bell peppers
- 1 pound ground chicken
- 1 cup cooked quinoa
- 1/2 cup chopped onion
- 1/4 cup chopped bell pepper (from one of the peppers)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 1/2 cup marinara sauce
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground chicken over medium heat until browned. Drain any excess fat.
- Add the chopped onion and chopped bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic, cooked quinoa, oregano, basil, salt, and pepper. Cook for 1 minute more.
- Spoon the chicken mixture evenly into the hollowed-out bell peppers.
- Pour about 2 tablespoons of marinara sauce over the top of the chicken mixture in each pepper.
- Place the stuffed peppers in a baking dish.
- Bake for 30-40 minutes, or until the peppers are tender and the chicken is cooked through.
- Top with mozzarella cheese during the last 5 minutes of baking.
Notes
- You can substitute brown rice for quinoa.
- Add other vegetables like corn or zucchini to the filling.
- Serve with a side salad for a complete meal.
