Easy Chicken Burritos

Description

Simple and delicious chicken burritos perfect for a weeknight Mexican dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 8 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: salsa, sour cream, guacamole, shredded lettuce

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Add minced garlic, chili powder, cumin, paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  5. Return chicken to the skillet. Add black beans and diced tomatoes with green chilies. Stir to combine.
  6. Bring mixture to a simmer, then reduce heat and cook for 10-15 minutes, or until chicken is cooked through and sauce has thickened slightly. Season with salt and pepper to taste.
  7. Warm tortillas according to package directions.
  8. Spoon chicken mixture onto the center of each tortilla. Sprinkle with shredded cheese.
  9. Fold in the sides of the tortilla, then roll up tightly to form a burrito.
  10. Serve immediately with your favorite toppings.

Notes

  • For spicier burritos, add more cayenne pepper or a pinch of red pepper flakes.
  • You can substitute shredded rotisserie chicken for cooked chicken breasts to save time.
  • If you don’t have diced tomatoes with green chilies, use one 14.5 ounce can of diced tomatoes and add 1-2 tablespoons of chopped green chilies.
