A comforting and easy casserole featuring broccoli, rice, and a creamy cheese sauce.

- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 cups cooked white rice
- 2 cups broccoli florets, cooked and drained
- 2 cups shredded cheddar cheese
- 1/2 cup bread crumbs
Instructions
- Preheat your oven to 375 degrees F (190 degrees C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in the cream of mushroom soup, cream of chicken soup, milk, salt, pepper, and paprika. Cook, stirring, until heated through.
- Remove from heat and stir in the cooked rice, broccoli, and 1 1/2 cups of the cheddar cheese.
- Pour the mixture into a 9×13 inch baking dish.
- In a small bowl, combine the remaining 1/2 cup cheddar cheese and bread crumbs. Sprinkle evenly over the casserole.
- Bake for 20-25 minutes, or until bubbly and the topping is golden brown.
Notes
- You can use fresh or frozen broccoli. If using frozen, thaw and drain it well before adding to the casserole.
- For a richer flavor, you can add a pinch of nutmeg to the sauce.
- If you prefer a crispier topping, you can broil the casserole for the last 1-2 minutes of baking, watching carefully to prevent burning.
