Description

A moist and flavorful upside-down cake featuring caramelized peaches and nutty browned butter.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, divided
  • 1 cup granulated sugar
  • 2 cups sliced fresh or frozen peaches
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a small saucepan, melt 1/2 cup (1 stick) of butter over medium heat. Cook, stirring occasionally, until the butter turns a golden brown and smells nutty. Remove from heat and set aside.
  3. In the prepared cake pan, combine 1 cup of granulated sugar and the remaining 1/2 cup (1 stick) of butter. Place the pan over low heat on the stovetop and stir until the butter is melted and the sugar is dissolved, creating a caramel sauce.
  4. Arrange the peach slices evenly over the caramel in the cake pan.
  5. In a medium bowl, whisk together the flour, baking powder, and salt.
  6. In a large bowl, cream together 1 cup of granulated sugar and the eggs until light and fluffy. Beat in the vanilla extract and the browned butter.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  8. Gently spread the batter evenly over the peaches in the cake pan.
  9. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.

Notes

  • Ensure your butter is browned but not burnt for the best flavor.
  • If using frozen peaches, do not thaw them completely before arranging them in the pan.
