Savory BBQ chicken piled high on tender baked sweet potatoes. A simple and satisfying meal.

- 2 large sweet potatoes
- 1 cup cooked shredded chicken
- 1/2 cup BBQ sauce
- 1/4 cup chopped red onion
- 1/4 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them several times with a fork.
- Bake the sweet potatoes directly on the oven rack for 45-60 minutes, or until tender when pierced with a knife.
- While the sweet potatoes are baking, combine the shredded chicken and BBQ sauce in a small saucepan. Heat over medium heat until warmed through. Stir in the chopped red onion.
- Once the sweet potatoes are tender, carefully slice them lengthwise, being careful not to cut all the way through. Gently fluff the inside with a fork.
- Spoon the BBQ chicken mixture into the sweet potatoes.
- Top with shredded cheddar cheese and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- You can use leftover rotisserie chicken for convenience.
- Adjust the amount of BBQ sauce to your preference.
- Other toppings like sour cream or green onions are also delicious.
