  • 1 cup chopped onion
  • 1 cup chopped bell pepper (any color)
  • 1 cup chopped zucchini
  • 1 cup chopped spinach
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  3. Add zucchini and spinach to the skillet and cook for another 3-5 minutes until zucchini is tender and spinach is wilted. Remove from heat.
