- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and diced
- 1 tablespoon lemon juice
- For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Grease and flour a muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, beat the eggs and granulated sugar until light and fluffy.
- Stir in the melted butter, milk, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- In a small bowl, toss the diced apples with lemon juice to prevent browning.
- Gently fold the apples into the batter.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the fritters cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- While the fritters are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach your desired consistency.
- Drizzle the glaze over the cooled fritters.
Notes
- For a richer flavor, you can add a pinch of ground cloves to the dry ingredients.
- If you don’t have a muffin tin, you can drop spoonfuls of batter onto a baking sheet lined with parchment paper, but they will be flatter.
