  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat the eggs and granulated sugar until light and fluffy.
  4. Stir in the melted butter, milk, and vanilla extract until well combined.
  5. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  6. In a small bowl, toss the diced apples with lemon juice to prevent browning.
  7. Gently fold the apples into the batter.
  8. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the fritters cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  11. While the fritters are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach your desired consistency.
  12. Drizzle the glaze over the cooled fritters.

Notes

  • For a richer flavor, you can add a pinch of ground cloves to the dry ingredients.
  • If you don’t have a muffin tin, you can drop spoonfuls of batter onto a baking sheet lined with parchment paper, but they will be flatter.
