A simple recipe for cooking chicken thighs in an Instant Pot to create a sticky, sweet, and savory glaze.

- 6 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1/2 cup soy sauce
- 1/2 cup brown sugar, packed
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon grated fresh ginger
- 3 cloves garlic, minced
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons cold water
- Sesame seeds, for garnish
- Sliced green onions, for garnish
Instructions
- Pat the chicken thighs dry with paper towels.
- Set the Instant Pot to Sauté mode and add the olive oil. Brown the chicken thighs on both sides until golden, about 3-4 minutes per side. Remove the chicken and set aside.
- In the Instant Pot liner, combine the soy sauce, brown sugar, honey, rice vinegar, ginger, garlic, and sesame oil. Stir well.
- Place the browned chicken thighs back into the pot on top of the sauce mixture.
- Secure the lid and set the valve to Sealing. Cook on High Pressure for 10 minutes.
- When the cooking time is complete, perform a Quick Release of the pressure.
- Remove the chicken thighs and set them aside on a plate.
- In a small bowl, whisk together the cornstarch and cold water to create a slurry.
- Set the Instant Pot back to Sauté mode (Low). Pour the slurry into the sauce remaining in the pot and stir constantly until the sauce thickens, about 1-2 minutes.
- Return the chicken thighs to the pot and turn them to coat them thoroughly in the thickened sauce.
- Serve the chicken thighs immediately, garnished with sesame seeds and green onions.
Notes
- You can use boneless, skinless thighs, but reduce the pressure cooking time to 8 minutes.
- For extra crispiness, place the sauced thighs under a broiler for 2-3 minutes after glazing.
