Instant Pot Chicken and Dumplings

Description

A simple recipe for making creamy chicken and dumplings in the Instant Pot.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 cup all-purpose flour
  • 1/2 cup cold water
  • 1 cup milk
  • 1 cup refrigerated biscuit dough, cut into quarters

Instructions

  1. Season chicken with salt and pepper.
  2. Set the Instant Pot to Sauté mode. Add olive oil. Brown the chicken on both sides, about 3 minutes per side. Remove chicken and set aside.
  3. Add onion, carrots, and celery to the pot. Sauté until softened, about 5 minutes.
  4. Pour in chicken broth and add thyme. Scrape up any browned bits from the bottom of the pot.
  5. Return the chicken to the pot. Secure the lid and set the valve to sealing.
  6. Cook on Manual/Pressure Cook for 10 minutes on High Pressure. Allow pressure to naturally release for 10 minutes, then quick release any remaining pressure.
  7. Remove chicken, shred it, and return it to the pot.
  8. In a small bowl, whisk together flour and cold water to make a slurry. Stir the slurry into the pot contents.
  9. Stir in the milk. Set the Instant Pot to Sauté mode (Low). Bring the mixture to a gentle simmer, stirring constantly until the sauce thickens slightly, about 3-5 minutes.
  10. Drop the biscuit pieces evenly over the top of the simmering mixture. Do not stir them in.
  11. Cover the pot with a lid (do not seal the pressure valve). Cook on the Sauté setting until the dumplings are cooked through, about 5-8 minutes.

Notes

  • You can use pre-cooked rotisserie chicken to save time.
  • For thicker dumplings, use slightly less liquid in the stew base.
