Ingredients

- 1 cup cooked quinoa
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: chocolate chips
Instructions
- In a medium bowl, combine cooked quinoa, almond butter, maple syrup, cocoa powder, vanilla extract, and salt.
- Mix until well combined. If using, stir in chocolate chips.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Serve chilled.
Notes
- Store leftovers in an airtight container in the refrigerator for up to a week.
- You can substitute peanut butter for almond butter if preferred.
- For a different flavor, add a pinch of cinnamon or chili powder.
