Ingredients

  • 1.5 lbs chicken thighs or breasts, cut into pieces
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Optional: Sesame seeds and chopped green onions for garnish

Instructions

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Set aside half of the sauce for later.
  2. Heat the vegetable oil in a large skillet over medium-high heat.
  3. Add the chicken pieces to the skillet and cook until browned on all sides and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
  4. Pour the reserved half of the sauce mixture into the skillet. Bring to a simmer.
  5. Whisk the cornstarch slurry again and pour it into the simmering sauce. Stir constantly until the sauce thickens slightly, about 1 minute.
  6. Return the cooked chicken to the skillet. Toss to coat the chicken evenly with the thickened sauce.
  7. Cook for 1-2 minutes until the chicken is fully coated and heated through.
  8. Serve immediately, garnished with sesame seeds and green onions if desired.

Notes

  • You can use chicken breasts or thighs; thighs remain juicier.
  • For a thicker sauce, let the sauce simmer a minute longer before adding the slurry.
  • Serve this chicken over steamed rice or with a side of steamed vegetables.
