- 1.5 lbs chicken thighs or breasts, cut into pieces
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon minced garlic
- 1 teaspoon grated ginger
- 1 tablespoon vegetable oil
- 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
- Optional: Sesame seeds and chopped green onions for garnish
Instructions
- In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Set aside half of the sauce for later.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet and cook until browned on all sides and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
- Pour the reserved half of the sauce mixture into the skillet. Bring to a simmer.
- Whisk the cornstarch slurry again and pour it into the simmering sauce. Stir constantly until the sauce thickens slightly, about 1 minute.
- Return the cooked chicken to the skillet. Toss to coat the chicken evenly with the thickened sauce.
- Cook for 1-2 minutes until the chicken is fully coated and heated through.
- Serve immediately, garnished with sesame seeds and green onions if desired.
Notes
- You can use chicken breasts or thighs; thighs remain juicier.
- For a thicker sauce, let the sauce simmer a minute longer before adding the slurry.
- Serve this chicken over steamed rice or with a side of steamed vegetables.
