Description

A simple recipe for chicken breasts cooked with vegetables in a sweet and tangy honey balsamic glaze.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup chopped red onion
  • 1/4 cup balsamic vinegar
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Cut chicken breasts into 1-inch pieces.
  3. In a bowl, whisk together balsamic vinegar, honey, soy sauce, and thyme.
  4. Toss the chicken pieces with half of the glaze mixture.
  5. Arrange chicken and vegetables (broccoli, carrots, red onion) on a baking sheet.
  6. Drizzle the remaining glaze over the chicken and vegetables.
  7. Season everything with salt and pepper.
  8. Bake for 20 to 25 minutes, or until the chicken is cooked through and the vegetables are tender.
  9. Serve immediately.

Notes

  • You can substitute other vegetables like bell peppers or zucchini.
  • For a thicker sauce, simmer the leftover glaze on the stovetop for 2 minutes after baking.
