A comforting and flavorful tomato soup made from fresh tomatoes.
Ingredients

- 2 lbs fresh tomatoes, ripe
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/2 cup heavy cream (optional)
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast the tomatoes for 20-25 minutes, until they are softened and slightly caramelized.
- While the tomatoes are roasting, heat the remaining olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the roasted tomatoes (and any juices from the baking sheet) to the pot.
- Pour in the vegetable broth and sugar. Bring the soup to a simmer.
- Reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.
- Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
- Return the soup to the pot. If using, stir in the heavy cream.
- Heat gently without boiling. Season with additional salt and pepper to your taste.
- Serve hot, garnished with fresh basil.
Notes
- For a richer flavor, you can roast the tomatoes with a sprig of rosemary or thyme.
- If you don’t have fresh tomatoes, you can use two 28-ounce cans of whole peeled tomatoes, undrained.
- Adjust the sugar to balance the acidity of the tomatoes.
