Homemade Tomato Soup With Fresh Tomatoes

Description

A comforting and flavorful tomato soup made from fresh tomatoes.


Ingredients

Scale
  • 2 lbs fresh tomatoes, ripe
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • Salt to taste
  • Black pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast the tomatoes for 20-25 minutes, until they are softened and slightly caramelized.
  4. While the tomatoes are roasting, heat the remaining olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  5. Add the minced garlic and cook for another minute until fragrant.
  6. Add the roasted tomatoes (and any juices from the baking sheet) to the pot.
  7. Pour in the vegetable broth and sugar. Bring the soup to a simmer.
  8. Reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.
  9. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  10. Return the soup to the pot. If using, stir in the heavy cream.
  11. Heat gently without boiling. Season with additional salt and pepper to your taste.
  12. Serve hot, garnished with fresh basil.

Notes

  • For a richer flavor, you can roast the tomatoes with a sprig of rosemary or thyme.
  • If you don’t have fresh tomatoes, you can use two 28-ounce cans of whole peeled tomatoes, undrained.
  • Adjust the sugar to balance the acidity of the tomatoes.
