A simple recipe for classic Italian salad dressing made from scratch.
Ingredients

- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Combine the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, basil, salt, and pepper in a small bowl.
- Whisk the ingredients together until well combined and emulsified.
- Alternatively, place all ingredients in a jar with a tight-fitting lid and shake vigorously until mixed.
- Taste and adjust seasoning if necessary.
- Serve immediately or store in the refrigerator.
Notes
- This dressing keeps well in the refrigerator for up to one week.
- If the dressing separates upon standing, shake or whisk it again before using.
- Add a pinch of sugar if you prefer a slightly sweeter dressing.
