Simple recipe for making fresh egg noodles from scratch.
Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup water
Instructions
- Combine flour and salt in a large bowl.
- In a separate bowl, whisk eggs and water.
- Pour the egg mixture into the flour mixture and mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
- Divide the dough into 2-3 portions.
- Roll out each portion thinly on a lightly floured surface or using a pasta machine.
- Cut the dough into desired noodle shapes.
- Cook the noodles in boiling salted water for 2-4 minutes, or until al dente.
- Drain and serve immediately.
Notes
- You can store fresh noodles in the refrigerator for up to 2 days or freeze them for longer storage.
- Adjust the water amount slightly if the dough is too dry or too wet.
