Simple recipe for making fresh egg noodles from scratch.
Ingredients

- 3 large eggs
- 1 cup all-purpose flour
- 1/2 teaspoon salt
Instructions
- In a medium bowl, whisk together the eggs, flour, and salt until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
- Wrap the dough tightly in plastic wrap and let it rest at room temperature for at least 30 minutes.
- Divide the dough into 2-3 portions. Working with one portion at a time, roll it out very thinly on a lightly floured surface.
- Cut the dough into desired noodle shapes (e.g., fettuccine, pappardelle).
- Let the noodles dry slightly on a clean kitchen towel for about 15-30 minutes before cooking.
- Cook the noodles in boiling salted water for 2-4 minutes, or until al dente. Drain and serve immediately.
Notes
- You can freeze the uncooked noodles by placing them in a single layer on a baking sheet until frozen, then transferring them to a freezer bag.
- For a richer noodle, use 2 whole eggs and 2 egg yolks.
