  • 2 tablespoons cold water
  • 1 large egg white, lightly beaten (for brushing)

Instructions

  1. In a large bowl, whisk together the flour, salt, and baking powder.
  2. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Stir in the shredded cheese until evenly distributed.
  4. Add the cold water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
  5. Shape the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll the dough out thinly, about 1/16 inch thick.
  8. Use a pizza cutter or knife to cut the dough into small squares or desired shapes. Prick each cracker a few times with a fork.
  9. Place the crackers on the prepared baking sheets. Brush the tops lightly with the beaten egg white.
  10. Bake for 10 to 14 minutes, or until the edges are lightly golden brown and the crackers are crisp.
