Description
A quick and easy recipe for chicken fried rice with a hibachi grill flavor.

- 1 tablespoon vegetable oil
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup frozen peas
- 2 cloves garlic, minced
- 2 large eggs, beaten
- 4 cups cooked white rice, cold
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- Salt and black pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion and carrots to the skillet and cook until softened, about 5 minutes. Add peas and cook for another 2 minutes.
- Push vegetables to one side of the skillet. Add beaten eggs to the empty side and scramble until cooked.
- Add cooked rice, soy sauce, mirin, sesame oil, and ginger to the skillet. Stir to combine and cook for 5-7 minutes, until heated through.
- Return chicken to the skillet and stir to combine. Season with salt and pepper to taste.
Notes
- For best results, use cold, day-old rice.
- Adjust soy sauce to your preference.
- Add other vegetables like broccoli or bell peppers if desired.
