- 1 lb ground turkey
- 2 large sweet potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add ground turkey to the skillet. Break it up with a spoon and cook until browned. Drain any excess fat.
- Stir in cumin, paprika, salt, and pepper.
- Add the cubed sweet potatoes and chicken broth to the skillet. Bring to a simmer.
- Cover the skillet and cook for 15-20 minutes, or until the sweet potatoes are tender.
- Transfer the mixture to a baking dish.
- Bake for 10 minutes, or until heated through.
- Garnish with fresh parsley before serving.
Notes
- For a creamier texture, you can add a splash of milk or cream.
- Add other vegetables like bell peppers or spinach for extra nutrients.
- This casserole can be made ahead and reheated.
