Description

A simple casserole combining ground beef and cauliflower rice for a low-carb meal.


Ingredients

  • 1 pound ground beef
  • 1 head cauliflower, riced (about 4 cups)
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1/2 cup beef broth
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  3. Add the chopped onion to the skillet with the beef and cook until soft, about 5 minutes.
  4. Stir in the riced cauliflower, beef broth, garlic powder, salt, and pepper. Cook until the cauliflower softens slightly, about 5 to 7 minutes.
  5. Remove the skillet from the heat. Stir in the heavy cream and half of the shredded cheese.
  6. Transfer the mixture to the prepared baking dish.
  7. Sprinkle the remaining cheese over the top.
  8. Bake for 20 minutes, or until the cheese is melted and bubbly.

Notes

  • You can substitute ground turkey for ground beef.
  • For extra flavor, add 1/2 teaspoon of dried Italian seasoning with the spices.
