Ingredients

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine olive oil, minced garlic, balsamic vinegar, oregano, salt, and pepper. Whisk to combine.
  3. Add the chopped vegetables and cherry tomatoes to the bowl. Toss gently to coat all the vegetables evenly with the marinade. Let marinate for at least 15 minutes.
  4. Thread the marinated vegetables onto the skewers, alternating the types of vegetables for visual appeal.
  5. Preheat your grill to medium-high heat.
  6. Place the vegetable skewers on the preheated grill.
  7. Grill for 8-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  8. Remove from grill and serve immediately.

Notes

  • You can add other vegetables like mushrooms, eggplant, or corn on the cob pieces.
