- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 cup cherry tomatoes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, combine olive oil, minced garlic, balsamic vinegar, oregano, salt, and pepper. Whisk to combine.
- Add the chopped vegetables and cherry tomatoes to the bowl. Toss gently to coat all the vegetables evenly with the marinade. Let marinate for at least 15 minutes.
- Thread the marinated vegetables onto the skewers, alternating the types of vegetables for visual appeal.
- Preheat your grill to medium-high heat.
- Place the vegetable skewers on the preheated grill.
- Grill for 8-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from grill and serve immediately.
Notes
- You can add other vegetables like mushrooms, eggplant, or corn on the cob pieces.
- For extra flavor, you can brush the skewers with a little extra marinade during grilling.
