Ingredients

  • 1 pound spaghetti, cooked and drained
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • For the Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked spaghetti, cucumber, red bell pepper, green bell pepper, red onion, Kalamata olives, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, garlic powder, salt, and pepper.
  3. Pour the dressing over the spaghetti mixture.
  4. Toss gently to coat all ingredients evenly.
  5. Chill for at least 30 minutes before serving to allow the flavors to meld.
