Description

A straightforward recipe for making homemade graham cracker style cookies.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy.
  4. Beat in the honey and vanilla extract. Add the egg and mix until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms. Do not overmix.
  6. Roll the dough out between two sheets of parchment paper to about 1/8 inch thickness.
  7. Use a knife or a cookie cutter to cut the dough into squares or rectangles.
  8. Place the cut dough pieces onto the prepared baking sheets. Prick the tops of the cookies several times with a fork.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden brown.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a more traditional look, you can score the dough lightly with a knife before baking to mimic the cracker lines.
  • Store cooled cookies in an airtight container at room temperature.
