Description

A simple recipe for cod fillets coated in a sweet and savory ginger soy glaze.


Ingredients

  • 4 (6 ounce) cod fillets
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil to make the glaze.
  3. Place the cod fillets on the prepared baking sheet.
  4. Brush half of the glaze mixture evenly over the top of the cod fillets.
  5. Bake for 10 minutes.
  6. Remove the fish from the oven and brush the remaining glaze over the fillets.
  7. Return the fish to the oven and bake for another 5 to 7 minutes, or until the cod is opaque and flakes easily with a fork.
  8. Heat the vegetable oil in a small skillet over medium heat. Quickly sear the glazed sides of the cod for 30 seconds each, if desired, for extra color.
  9. Serve immediately.

Notes

  • You can substitute cod with other firm white fish like halibut or tilapia.
  • For a thicker glaze, simmer the glaze mixture on the stovetop for 2 minutes before brushing it on the fish.
