Description

A straightforward recipe for rich, fudgy squares with a coconut-pecan topping.


Ingredients

  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) package semi-sweet chocolate chips
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  • 1/4 cup evaporated milk
  • 1/4 cup packed light brown sugar

Instructions

  1. Line an 8×8 inch pan with parchment paper, leaving an overhang.
  2. Combine the sweetened condensed milk, chocolate chips, and butter in a heavy saucepan over low heat. Stir constantly until the chocolate is completely melted and the mixture is smooth. Do not let it boil.
  3. Remove the pan from the heat and stir in the vanilla extract.
  4. Pour half of the chocolate mixture into the prepared pan and spread evenly. Set aside.
  5. For the topping, combine the pecans, coconut, evaporated milk, and brown sugar in the same saucepan. Cook over medium heat, stirring constantly, until the mixture boils. Reduce heat to low and cook for 3 minutes, stirring.
  6. Remove the topping mixture from the heat and spread it evenly over the chocolate layer in the pan.
  7. Gently pour the remaining chocolate mixture over the topping layer. Spread carefully to cover.
  8. Chill in the refrigerator for at least 3 hours, or until firm.
  9. Lift the fudge out of the pan using the parchment overhang. Cut into small squares before serving.

Notes

  • For easier cutting, allow the fudge to sit at room temperature for 10 minutes before slicing.
  • Store leftover fudge in an airtight container in the refrigerator.
